We have grains on the brain. All the time.
In order to understand what whole grains are, we need to understand where they come from. Whole grains are the entire seed of a plant, most commonly from wheat and rye. They are made up of three parts: the bran, the germ, and the endosperm. The bran and the germ of a whole grain are rich with healthy nutrients, including fiber, vitamins, and minerals, while the endosperm contains starchy carbohydrates.
Over the past several years wheat has gotten lost in the farm to table conversation, relegated to a commodity, driven by availability and price. Our goal with La Brea Bakery Reserve was to put a focus back on one of mankind’s most important ingredients: single origin heirloom grains. Grown in Big Sky Country, Montana, the whole kernel of the Fortuna grains are milled into Cracked Wheat, Whole wheat Flour and baked into our Reserve breads.
We chose Big Sky Country, Montana, because of the line of Fortuna wheat that is grown there and how the environment helps with its flavor development and character. These two factors together along with our passion for baking create breads packed with healthy nutrients and deep, nuanced flavor you can taste.
