Bacon-Onion Swiss Pizza

This combination of roasted garlic bread, bacon, caramelized onions, and Swiss cheese creates the perfect pizza umami.

Ingredients
  • 1 La Brea Bakery Roasted Garlic Loaf
  • 1 pound smoked bacon, cut into 1-inch by ¼-inch pieces
  • 2 large yellow onions, sliced into ⅛-inch thick slice
  • Salt and freshly ground black pepper, to taste
  • 8 ounces Swiss or gruyere cheese, shredded
  • ½ cup crème fraîche (or sour cream)
  • 1 bunch fresh chives, finely chopped
Preparation

  1. Heat oven to 375°F. 
  2. In a large pan over medium-high heat, cook the bacon, stirring often until it starts to brown lightly but is not yet crispy.
  3. Add the onion, salt and pepper. Continue cooking, stirring frequently to prevent burning, until the onions are tender.
  4. While the onions are cooking, split the La Brea Bakery Roasted Garlic Loaf lengthwise into a top and bottom. Place both halves, crust side down, on a sheet pan and toast in the oven until lightly toasted, approximately 5 minutes Remove.
  5. Spread the crème fraîche evenly over the top surface of both bread halves. Divide the bacon-onion mixture between the two pieces and distribute evenly.
  6. Sprinkle the cheese evenly over both bread halves, covering from edge to edge. Return the bread to the oven and bake until the cheese is melted and bubbling, 7 to 8 minutes.
  7. Transfer the bread to a cutting board and slice each half loaf lengthwise once down the middle, then side-to-side three times, yielding eight pieces per half loaf. Top with chopped chives and serve.
