Cocktail Sandwich Skewers

Take this sandwich platter to your next party, picnic, potluck, or tailgating event. 

Ingredients
  • 1 La Brea Bakery Rustic 8 Grain Loaf, cut into 3 ½-inch slices
  • 1 teaspoon pesto (favorite recipe or store-bought)
  • 1 teaspoon mustard
  • 1 teaspoon mayonnaise
  • 2 ounces mixed Italian meats (prosciutto, capocollo, salami)
  • 2 ounces roasted turkey
  • 1 ounce fresh mozzarella
  • 2 ounces honey-glazed ham
  • 1 ounce cheddar cheese
  • 1 ounce brie
  • 3 to 4 leaves butter lettuce
  • 1 tomato, sliced
Preparation
  1. Heat oven to 350°F.
  2. Spray or drizzle bread with olive oil and bake until just starting to brown, 5 to 10 minutes. Remove from oven and allow to cool before cutting slices in half.

To build the cocktail sandwich skewers:

  1. Italian - Build a sandwich by adding pesto, tomato, mixed meats, and fresh mozzarella.
  2. Turkey - Build a sandwich by adding mayonnaise, tomato, lettuce, turkey, and cheddar cheese. 
  3. Ham - Build a sandwich by adding mustard, ham, lettuce, and brie cheese.
  4. Push a wood skewer through each sandwich, avoiding palms and fingers. Arrange on a platter and serve.
