Perfect for brunch or holiday morning gatherings, this savory breakfast casserole can be made ahead and ready for the oven.
Ingredients
- 1 La Brea Bakery Frech Baguette, cut into 1-inch cubes
- ½ pound bacon, diced
- 8 medium eggs
- 1¼ cups whole milk
- 1 cup cheddar cheese, grated
- Salt and freshly ground black pepper, to taste
- 2 green onions, thinly sliced (for garnish)
Preparation
- Grease a 9x13-inch pan. Evenly layer in the bread cubes.
- In a medium pan, cook the bacon over medium heat, stirring occasionally, until it is cooked through. Remove from heat, including any rendered bacon fat, and allow to cool slightly.
- While the bacon is cooking, beat the eggs in a large bowl. Mix in the milk, cheese, salt, and pepper.
- When the bacon is cooled slightly, add it to the egg mixture.
- Carefully pour the egg and bacon mixture over the bread cubes and stir to incorporate. Press the bread cubes into the egg mixture as needed, so all the bread cubes are in the liquid.
- Cover and let sit for at least 30 minutes, preferably in the refrigerator overnight.
- When you are ready to bake the casserole, preheat the oven to 350°F. Bake the casserole on the middle oven rack uncovered until the middle is set and the top has browned, about 45 to 55 minutes. A toothpick inserted in the middle of the casserole should come out clean.
- Remove the casserole from the oven and allow to cool slightly. Garnish with green onions and serve warm.
