The flavors of our rosemary infused loaf are enhanced by gently roasted balsamic tomatoes and the unique salty taste and texture of halloumi cheese. The balsamic glaze keeps the dish just slightly sweet as we are used to, but with that tantalising blend of sweet and savory that we all love about French toast.
Ingredients
For the balsamic tomatoes:
- 1 punnet of small tomatoes, preferably on the vine
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
- 4 tablespoons good quality balsamic glaze
- ½ teaspoon fresh or dried chopped rosemary
For the French toast:
- 8 Large slices of La Brea Rosemary round loaf
- 4 eggs, beaten
- ½ teaspoon Kosher salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon onion powder
- 1 tablespoon neutral oil
To Serve:
- 8 oz halloumi cheese, sliced into approx. ¼ inch slices
- Fresh soft herbs such as thyme, parsley or oregano leaves, picked
Preparation
- To prepare the tomatoes, use the smallest pan they will fit in. Place the tomatoes in the pan, with the vine if they have one, and drizzle the other ingredients on top.
- Cook on a medium heat while you prepare the French toast. When the tomatoes begin to soften, squash them gently to burst and release the juice. This will create the most tasty, delicious pan juice!
- In a separate large bowl, whisk the eggs, salt, pepper and garlic powder together.
- Heat a large skillet with the neutral oil on a medium high heat until a drop of water sizzles in the pan.
- Dip the slices of bread into the egg mixture, leaving to absorb for a couple of seconds, and transfer to the skillet, making sure the slices do not touch.
- Cook on each size until golden brown – about 2 minutes per side.
- Prepare the halloumi by lightly toasting each side in a little oil in a non-stick pan until golden brown.
- To serve, plate 2 slices of French toast with 2 slices of halloumi and some of the roasted tomatoes. Drizzle with plenty of delicious pan sauce. Sprinkle with fresh herbs and serve.
