12 cups La Brea Bakery Three Cheese Semolina Loaf, cut into cubes

⅔ cups butter

2 small onions, diced

4 ribs celery, diced

½ teaspoon ground sage

2 tablespoons fresh parsley

3 cups chicken broth

Salt and freshly ground black pepper, to taste
Preparation
- Heat oven to 350°F.
- Melt butter in a large pan over medium heat. Add onion, celery, and sage. Cook over medium-low until tender (do not brown), about 10 to 12 minutes.
- Place bread cubes in a large bowl. Add vegetable mixture and parsley. Pour broth over top until cubes are moist (but not soggy) and gently toss. Season with salt and pepper to taste.
- Place mixture in an oven-proof serving dish, dot with additional butter, and cover. Bake for 35 minutes, uncover, and bake for an additional 10 minutes. Serve warm.
