Ingredients
- La Brea Bakery Ciabatta Rolls (4x4)
- Eggs
- Black beans, cooked
- Cotija cheese, crumbled
- Salsa rojo
- Salsa verde
- Corn kernels, roasted
- Pickled jalapeños, sliced
- Jalapeño-ranch dressing
- Fresh cilantro
Preparation
- Separate Ciabatta Roll into halves and brush with oil. Grill until golden in a preheated panini press.
- Cook eggs sunny side up. Warm beans and corn.
- To build, place the Ciabatta cut side up on a plate and spoon salsa verde on top. Add half the beans and cheese and place the eggs on top. Next, spoon the salsa rojo and jalapeño-ranch dressing on top of the eggs and then top with remaining beans, cheese, and corn. Finish with jalapeños and cilantro.
