Breakfast Sandwich with Maple Bacon Glaze

Kick off your day the right way, with a maple-bacon breakfast sandwich.

  1. Toast the roll and set aside.
  2. In a preheated pan, sauté the shallots in butter until soft. Roughly chop one slice of bacon and add it to the skillet. Stir in the maple syrup and a splash of water, cooking until the bacon and shallots are well coated. Spoon this mixture over the top slice of the roll, brushing to cover evenly, then set aside.
  3. In the same pan, over medium heat, cook the egg sunny side up.
  4. To assemble the sandwich, place the cheddar cheese on the bottom half of the Ciabatta roll, followed by the arugula and the remaining two slices of bacon. Top with the cooked egg, then place the top bun with the maple-bacon mixture on top. Serve immediately.
