The Cowboy: Short Rib Grilled Cheese

This recipe takes grilled cheese to the next level with melted jack cheese, tangy barbecue onion jam, and tender short ribs.

  1. Place a medium cast iron skillet (or similar) over medium-low heat, heating for 2 minutes while assembling the sandwich.
  2. Butter one side of each slice of bread, placing its butter side down on the cutting board.
  3. Place two slices of jack cheese on each slice of bread. Add the short rib and onion jam. Top with the remaining bread slice.
  4. Transfer the sandwich to the preheated pan. Cook over medium-low heat for 3 minutes on each side, or until bread is golden brown and cheese has melted. Cut and serve.
