Whipped feta flavored with mint and green chilli makes this sandwich really sing. The textures of the crispy bread, crumbly falafel and creamy feta come together for a healthy and vegetarian lunch that will satisfy the hungriest crowd.
Ingredients
For the Whipped Feta:
- 4 Oz. block of feta, roughly crumbled
- 4 Oz. Whipped cream cheese
- 1 Jalapeno (roughly chopped)
- 1 Serrano chilli (optional) (roughly chopped)
- 3 Oz. Fresh mint leaves (no stems)
- Pinch of freshly ground black pepper
- 1 Tablespoon- ¼ cup of water, depending on desired consistency
For the Sandwich:
- 1 pack La Brea Take and bake baguette twin pack
- Premade Falafels – prepared according to package directions. Around 8oz. per baguette
- ½ Cup red onion
- ¾ Cup English cucumber
- ¾ Cup Cherry tomatoes
- 7 Oz. Olive tapenade
- Flaky salt, to taste
- Fresh mint or dill for garnish
Preparation
- Prepare the baguettes and falafel according to the package directions. (Fried falafel are always best, if you are looking for advice!)
- Prepare the vegetables: Slice and quarter the cucumber, chop the herbs, halve the cherry tomatoes and halve, and thinly slice the onion.
- To prepare the whipped feta, pulse the jalapeno, optional serrano, mint, pepper and feta in a blender or small food processor until it reaches ¼ inch pieces. Add the cream cheese and water, a tablespoon at a time, until the desired consistency is reached. Scrape down the sides of the blender as necessary.
- Slice the baked baguettes lengthwise and spread whipped fetta generously on the insides.
- Spread the chopped tomatoes, cucumber and onion evenly inside both baguettes.
- Break the falafel into 2-3 pieces and spread evenly between the two baguettes
- Spoon the olive tapenade evenly over the falafel.
- Garnish with mint or dill and flaky salt.
- Slice each finished sub in half to make 2 servings each and enjoy.
